Food File: Guilt free oats & quinoa chocolate chip cookies

There’s nothing like finding the perfect healthy (or somewhat healthy) version of that sweet thing you like, right? And when it tastes just as good as the non healthy one, I’d say it’s a win win. A perfect win win 🙂

I found this recipe on Half Baked Harvest, and decided to give it a go with some minor changes (less sugar, swapped the flour, less chocolate). The result is insanely good, and from now on, definitely my go-to chocolate chip cookie recipe 😉 Did I tell you that you don’t need a mixer to make these? Yeap, they are super easy too, just throw it all in a bowl, mix with a wooden spoon and you’re set!

WHAT YOU NEED:
. 2 1/2 cups of oats
. 2 cups quinoa flour
. 1/3 cup white sugar
. 1/2 cup brown sugar
. 1 teaspoon baking soda
. 1 teaspoon salt
. 1 cup coconut oil
. 2 eggs
. 2 teaspoons vanilla extract
. 1 cup dark chocolate chips

WHAT TO DO
. Preheat oven at 350 F and line a baking sheet with parchment paper.
. Using a fork, whisk the eggs in a bowl.
. Combine all ingredients in a mixing bowl (reserve the chocolate chips for last) and mix with a wooden spoon or spatula. Add the chocolate chips and using a spoon form balls of your desired size (I went for bite size but you can make them as big as you want)
. Bake for 12 minutes
. Let cool (but not too much!) and enjoy!

PS: don’t forget to sprinkle with some fleur de sel 😉
