Food File: Chocolate Tiramisu

Today I’m sharing this suuuuper easy recipe for chocolate tiramisu that we enjoyed on our girls night. Are you a fan of tiramisu? I was never, and I mean, never, a fan of tiramisu. Since it’s made with coffee and I’m not exactly a fan of coffee (I prefer tea ;)), I never even considered trying it. Then, one day my friend Sarah whipped up this chocolate version for the non-coffee lovers like me and I was forever converted. If you’re not a coffee fan or simply a chocolate lover (who isn’t??) give this recipe a try, you’ll seriously love it, plus, it’s pretty easy 🙂

Ingredients: 
Dipping mix: 
. 1 cup of water
. 2 tbsp. cocoa powder (traditional tiramisu is made with coffee, so basically you’re just swapping it for chocolate)
. 1 tsp vanilla
Chocolate cream:
. 1/2 cup heavy cream
. 1 tsp. sugar
. 4 ounces dark chocolate
Mascarpone Mix:
. 1 cup mascarpone cheese
. 1 tsp. vanilla
. 1 cup heavy cream
. 1/3 cup sugar
. 18-24 italian style ladyfingers
. Dark chocolate to grate on top
Directions: 
. Start by making the dipping sauce by combining the ingredients in a small pot over low-medium heat. Set aside and let cool.
. For the chocolate cream, melt the chocolate with the heavy cream and sugar in a pot over low-medium heat. Stir until well combined. Set aside and let cool.
. Using an electric mixer, whisk the heavy cream and sugar until stiff peaks form. Fold in the mascarpone and vanilla. 
. To assemble, quickly dip each ladyfinger as you go (1 second each side), spread a layer of the mascarpone mix and add a spoonful of chocolate cream. Repeat layers until you have reached the top of your glass, mug or cup and finish it off with some grated dark chocolate on top.
. Refrigerate for at least 2 hours or overnight. 
. Recipe yields 6 cups.
