I whipped up this recipe for World Market and I wanted to share it with all of you since it’s apple picking season and it’s so easy to make! If you have ramekins then use them to bake individual portions, otherwise you can definitely bake this crumble in one deep baking dish and then carefully spoon out personal portions and transfer them to individual cups like I did (just don’t tell!) 😉
Ingredients:
. 4 to 5 cups of Granny Smith or red apples, cored, peeled and cut into small slices
. 1 1/2 tbsp Coconut palm sugar (you can replace it with brown sugar)
. 1 tbsp Whole wheat flour
. 1 tsp Cinnamon
. 1/4 tsp Nutmeg
. 1 Cup Oats
. 1 cup Whole wheat flour
. 1/2 cup Coconut palm sugar (or brown sugar)
. 1/2 tsp Vanilla extract
. 1/2 tsp Baking powder
. 1 cup coconut oil, melted
. 1/4 cup Pecans, ground or chopped
. Optional (and recommended): a scoop of vanilla ice cream 😉
What to Do:
. Preheat the oven to 350F
.To make filling, place the first 5 ingredients in a bowl and mix together until well combined. Then, transfer to a deep 10 x 6 baking dish or six 9 oz. ramekins.
. Make the crumble by combining the oats, flour, sugar, and baking powder. Add the melted coconut oil and vanilla extract and combine with a spatula or wooden spoon. Add the pecans.
. Layer the crumble mixture on top of the filling and bake for approximately 30 minutes or until golden brown and when the apples have softened.
. If you baked it in a baking dish, scoop up personal portions and transfer to small bowls or ramekins.
. Enjoy with some ice cream or greek yogurt for a healthy twist 😉
