Food File: Apple Cinnamon Protein Waffles

Here’s a recipe I’ve been meaning to share after going apple picking and putting all those apples to good use! These delicious waffles are great not just for breakfast or brunch, but served with vanilla ice cream, a delicious guilt-free little dessert (mom’s idea!) to indulge in 🙂

I find that making and storing waffles in the freezer is super practical. Sometimes I’d defrost a triangle or two and eat with almond butter either before or after a workout/run. I also like on relying on homemade food I can offer Matthew when I’m pressed on time. It’s all about meal planning and stuffing that freezer with as much healthy food as possible over here! Anyway, I think you’ll love these because I got my mom (the one with the biggest sweet tooth who when it comes to desserts is hard to please) to try them and she not only gave them two thumbs up but asked for the recipe. That’s what I call success! They are dairy-free, gluten-free if you use gluten-free oats, and high in protein. Keep on reading for the recipe!

What you need:
. 1 cup oats (you can definitely use gluten free if needed).
. 1/2 cup whole wheat flour (use white flour if you wish or any other kind).
. 1 1/2 scoops of unflavoured protein powder (I like to use Genuine’s Health fermented vegan protein powder).
. 2 tsp. cinnamon.
. 1 tsp. nutmeg.
. 1 tbsp. baking powder.
. 2 eggs
. 1 cup unsweetened almond milk (I’m sure any kind of milk works)
. 1 tbsp. vanilla essence.
. 2 small red apples, cored, peeled and grated.
Apple Garnish – optional:
. 1 apple cut in thin slices.
. 2 tsp. cornstarch
. 1/3 cup water.
. 1 tbsp. cinnamon.
. 1/4 cup brown sugar.
What to do:
. Grease and preheat your waffle maker.
. In a medium sized bowl combine all dry ingredients. 
. Add egg, milk, vanilla and mix well.
. Add grated apple and fold together until well combined.
. Drop a big spoonful on waffle maker and cook until golden brown.
. Recipe makes 4 big round waffles (16 small pieces).
For the apple garnish, place all ingredients in a small pot and cook on medium heat for 3-5 minutes.  Lower the heat and continue cooking for about 10 minutes. Top each waffle with some of it and finish with some powdered sugar and maple syrup.
