I like to believe that I eat pretty healthy: I don’t like fast food at all (last place you’ll ever find me is in a food court), I don’t eat anything fried (I had to buy a bottle of regular oil for some churros I made the other day, and I guess it will last years!), I don’t drink sodas (water and green tea are my jam, oh and I’ve been loving, yes loving, green juices), I’m not the biggest fan of chips, and even though I do have a sweet tooth, I don’t like candy bars. Is not that I make a huge effort to avoid eating sweets, fortunately I turned
my “sweet switch” off a couple of months ago and my body is just not asking for it. But, every now and then I like to whip up a yummy sweet recipe, especially when I have friends over or when I have to pay favors (I like to pay in cookie currency). And when I came across this recipe I just couldn’t resist trying it out, I mean, look how insanely good they look (I’m talking about the original recipe), see? hard to resist.
So, I made a batch and wow, these are incredible! I swapped the flour for wholewheat and I sprinkled the cookies with sea salt, but other than that I followed the recipe pretty close (maybe next time I’ll swap the oats for quinoa flakes and see how they turn out). These are soft inside but with the right amount of crispiness on the outside, seriously perfect. And, you don’t need a mixer, which means less mess 😉
I’ll include the recipe here (originally from How Sweet it is)
What you need:
– 1/2 cup butter
– 1/2 cup sugar
– 1/2 cup brown sugar
– 1 1/4 cup flour (I used wholewheat)
– 3/4 cups oats
– 1 egg
– 1/4 tsp salt
– 1/2 tsp baking powder
– 1 1/2 tsp cinnamon
– 1 cup chocolate chunks
– 2 tsp vanilla
What to do:
. Melt butter on medium heat until foamy (just after it starts bubbling, and it starts to look brownish, aprox 6 min). Let cool.
. Combine flour, baking soda, salt, cinnamon.
. Once the butter has cooled down mix with sugars. Add vanilla and egg and whisk until combined.
. Slowly add dry ingredients, and use hands to mix if you need to (I did).
. Add chocolate chunks and refrigerate dough for 30 min.
. Form balls and place on a baking sheet. Bake for aprox 12-15 min at 350 F until bottoms are golden.
