Food File: Chocolate Dipped Coconut & Date Protein Bites Recipe

Today I want to share with you one of my favourite bites recipe. Of all the bites I’ve made and shared here, these here are without doubt the BEST ones. I’m sure that the fact that they are sweet plays a role, but if you’re looking for a little pick-me up without any added sugars or weird ingredients, you should definitely make these. I do have to say that they are the sweetest bites I’ve made (blame it on the dates!), so I’ll probably be experimenting with this recipe and try to use less dates next time or swap for something else!

The recipe is based on this one (one of my fave blogs!) with a few little tweaks and additions. It’s very straightforward, simple, fast, and soooooo delicious! And if you like things on the sweet side, well let me tell you, you’re going to love them!



What you need:
. 2/3 cup pitted medjool dates.
. 2/3 cup unsweetened shredded coconut.
. 1 scoop vanilla flavoured vegan fermented protein powder. This is the one I like but feel free to use any of your liking. 
. 1/4 cup almond butter (I’m sure you can substitute with any other nut butter you prefer).
. 1 tbsp. hemp hearts.
. 1 1/2 tsp. coconut oil.
. 8 (56gr.) dark or semi-sweet chocolate squares (I used this one).

What to do:
. Add coconut, dates, protein powder, almond butter and hemp hearts to your food processor and pulse until combined. 
. Remove from food processor and using your hands shape each bite by rolling them like a ball and lightly pressing them until you have given them their form.
. Place bites on a tray or plate and transfer to the fridge so that they harden a bit.
. In the meantime, place coconut oil and chocolate in the microwave and heat for approximately 1 1/2 to 2 minutes.
. Stir with a spoon and let cool.
. Take your cookies out from the fridge (I think I let mine sit in it for about 10 min) and dip half of them in the melted chocolate.
. Place each cookie on a tray lined with parchment paper and transfer to the fridge again.
. Enjoy once the chocolate hardens and store in an air tight container for a few days!
