Food File: Coconut Oil Chocolate Chip Oatmeal Cookies

Every now and then I like to indulge in a good chocolate chip cookie, the perfect chocolate chip cookie though. You know, slightly crunchy on the outside, soft and chewy in the inside, and with just the right amount of dark chocolate chunks, and maybe some nuts 😉 I don’t easily fall for just any cookie, I either get one at Le Gourmand (thanks Jenny and Daniela for the tip!), or I bake my own with healthy ingredients.

I’ve tried many recipes (with and without tweaks), but last week I made these and seriously loved them! I was afraid they were not going to turn out good as I didn’t use white or brown sugar (I used organic coconut palm sugar instead), but to my surprise they were a huge success! Highly recommend you give them a try!

The original recipe is from Avery Cooks, and here’s what her recipe calls for and how I tweaked it:

Ingredients:
. 1 large egg
. 1/2 cup melted coconut oil
. 1/2 cup light brown sugar, packed and 1/4 cup granulated sugar * I replaced them with a little bit less than 3/4 cup of organic coconut palm sugar
. 1 tablespoon vanilla extract
. 1 teaspoon cinnamon
. pinch salt, optional and to taste * I skipped this and sprinkled the cookies with sea salt when they were done
. 1 cup sweetened shredded coconut * I replaced it with the unsweetened kind
. 1 cup old-fashioned whole rolled oats (not instant or quick cook) * I used instant
. 1 cup all-purpose flour * I replaced it with wholewheat flour
. 1 teaspoon baking soda *Didn’t put any
. 3/4 cup semi-sweet chocolate chips *Found that 1/2 cup was enough

Directions:
. In a large mixing bowl whisk the egg and add the coconut oil (melted). Whisk them both, add sugar, vanilla, and cinnamon and combine with a wooden spoon.
. Add flour, oats and coconut, and lastly the chocolate chips. They will slip out of the dough, so just keep folding them in for about a minute.
. Now you’re going to cover the bowl with plastic wrap and place in the refrigerator for at least an hour – this is very important!!! (the recipe says 3 hours but I only waited one and it was fine)
.Take out, scoop some dough balls (if it’s too firm, once you roll it in your hands it becomes softer) and place on a lined baking sheet. Bake at 350F for about 10 min or until slightly golden on the bottom. Enjoy!
