Food File: Easy Healthy Chocolate Chunk Cookies

Here’s a super simple one-step chocolate chunk cookie recipe that you can whip up in no time for those moments when the sweet cravings hit. This recipe is a slightly different version of Ana’s super popular soft and chewy flourless cookies (see recipe here) only because I always like to tweak recipes and give them my own spin. She always gets lots of people reaching out saying they love them, so feel free to make her recipe too!

WHAT YOU NEED:

. 1 1/2 cups of oats.

. 1 1/2 cups almond flour.

. 1 scoop vanilla flavoured protein powder (my fave is this plant based one).

. 1/4 cup unsweetened coconut.

. 2 ripe mashed bananas.

. 1 beaten egg (you can definitely make the recipe vegan by substituting with a flax egg).

. 1/2 cup unsweetened almond milk.

. 1 tsp baking powder.

. A dash of cinnamon.

. 1 tsp baking soda.

. 1 tsp vanilla extract.

. 1/2 cup semi-sweet chocolate chunks (I like to buy this one, but you can use this brand to make the recipe dairy-free)

WHAT TO DO:

. Preheat your oven to 350 degrees and line a baking sheet with parchment paper.

. In a large mixing bowl, combine all dry ingredients.

. Combine bananas, vanilla, milk and egg and add to dry ingredients.

. Scoop up dough with a spoon and place on baking sheet.

. Bake for 12-15 minutes or until slightly golden.

. Let cool and enjoy!

NOTES:

You can swap the bananas for unsweetened applesauce if you like that taste better.

I find that cookies made with either applesauce or bananas don’t taste as good the day after so, eat them all or freeze leftovers to consume later on!
