I’m constantly experimenting with protein bite recipes in the kitchen and this no-bake vegan version turned out really good. This is probably my favourite recipe to date, so if you’re fan of protein bites I definitely recommend giving it a go and trying not to eat the whole thing in one sitting (yes, they are that good, and yes, if you want to know I did that!). You can certainly shape them into balls or even bars, but I thought I’d make something different to “switch” things up a bit. I should tell you though, I initially incorporated chocolate chips into the recipe only to realize that the dough would come apart when cutting it into pieces, so if you rather go that way what I suggest shaping the dough into balls or bars. Another option of course, is to dip them entirely in melted chocolate, so as you can see the possibilities are endless and you can definitely customize the recipe to what best suits you!
These are perfect to keep in the fridge during the week when you need a little pick-me-up, when the sugar cravings hit, or as a quick pre or post workout bite. Hope you like them!
WHAT YOU NEED:
. 1/2 cup almond flour.
. 1/4 cup unsweetened shredded coconut.
. 1 scoop vanilla flavoured protein powder (I’m a fan of the Vegan Fermented Protein Powder from Genuine Health).
. 1 tbsp. hemp hearts.
. A dash of cinnamon.
. 1 tbsp. agave.
For garnishing: I sprinkled some almonds and melted chocolate (in the microwave with a teaspoon of coconut oil)
