Food File: Fresh & Easy Green Salad

I’ve been meaning to share this salad “recipe” because I’ve been obsessed with it ever since I had it for the first time, it’s SO good! It’s the perfect Spring/Summer salad and I can’t tell you how fresh it is! The cilantro it’s definitely the key ingredient, and what makes it so so fresh; and the radish and edamame add the right amount of crunchiness. I’m pretty sure that once you give it a try you’ll be hooked 🙂

Ingredients:
. 1/2 avocado
. 1 to 2 cups of Baby Spinach or Kale
. 1 cup Edamame (I like to get the frozen organic shelled kind)
. A handful of Cilantro
. 2 Radishes

What to do:

. Heat the edamame in one cup of water in the microwave for 1 minute.
. Cut the avocado in chunks, the radish in thin slices and combine with the rest of the ingredients.
. Top with a drizzle of extra virgin olive oil and sea salt and enjoy!
