Food File: Healthy Protein Waffle Recipe

I got a waffle maker right after Christmas (this one) and I’ve been loving it. The reason why I got it, besides wanting to spoil Matthew (he loves eating them at my brother’s when he stays over), is that I thought it would be perfect for making batches of the healthy kind and then freeze them. You see, I’m a big fan on having a freezer full of homemade meals, is the only way I can squeeze in many things during the day and give Matthew healthy meals. So, you can call the whole reason practicality with a side of taste and nutrition 😉

These right here were the very first recipe I tweaked and I’m eager to keep on trying different recipes and including different ingredients. They turned out GREAT (I ate two full big ones, two!) and Matthew loved them! Top them with your favourite fruits (berries are my fave), seeds (for added nutrition and some crunchiness), perhaps a spoonful f yogurt or almond butter, and of course, real maple syrup, and you have one healthy and delicious meal! These are perfect for weekends 🙂
HERE’S WHAT YOU NEED (Makes 4 whole waffles, that is, 16 triangles):
. 1 cup oats or wholewheat flour. 
. 1 1/2 scoops of vanilla flavoured protein powder (like I have mentioned many times, this is the one I buy 😉
. 1 tbsp. baking powder.
. 1 tsp. vanilla.
. 1/2 tbsp. cinnamon.
. 2 eggs (I buy the free-run kind).
. 1 cup almond milk (I use the unsweetened one).
AND WHAT TO DO:
. Turn on your waffle maker on medium heat.
. You can either combine everything in your blender or Vitamix (that’s what I did) or go the old-fashioned way and:
. Combine all dry ingredients together.
. Whisk the eggs and almond milk. Add the vanilla essence.
. Add dry ingredients to wet ingredients and combine with a wooden spoon.
. Let a big spoonful of batter on the waffle maker and follow the instructions according to your own.
. Serve with your favourite toppings such as berries, bananas, maple syrup, seeds.
. You can store the leftovers in a ziploc in the freezer for future consumption 😉
