Food File: No-bake chocolate chip & quinoa energy balls

Ok, I know this might look similar-ish to last week’s recipe and you’re probably tired of reading about more recipes with chocolate chips, but this is completely (you do know that some dark chocolate is good right?) healthy and sooo good! My sweet tooth has been enjoying these and no other type of sweets for the last 2 weeks. It’s good, healthy, easy and fast. Oh and there’s no need to bake it, do you really need more convincing? Trust me, this is a great high-fiber snack that’s delicious, and you can completely customize it to your taste 😉

WHAT YOU NEED:

– 2/3 cups 5 grain mix (or use regular oats and add some flaxseeds)
– 1/3 cups high fiber hot cereal mix
– 2/3 cups dark chocolate chips
– 2/3 cups shredded coconut
– 1/3 cup honey
– 1/2 cup almond butter

WHAT TO DO:

Mix all dry ingredients, then add the honey and almond butter. Chill in the fridge for 30 min or so and then take out and form into balls. Store in the fridge in a container and enjoy! These are great both pre and post workouts 😉 Annnd if you’d like to, you can swap the chocolate chips for raisins and add a teaspoon or two of cinnamon, or just swap the chocolate chips for anything you’d like!

*Tip: If you don’t like the grainy texture of oats, then instead of using 2/3 cups of the 5 grain mix, go for one whole cup of the high fiber hot cereal mix. The idea is that you use 1 cup of oats/grains, so go with whatever ratio you feel like you like the best!

After discovering quinoa flakes I adapted this recipe, this new version tastes better and it’s not messy at all! Just form the balls and store them in the fridge 😉

– 1 cup quinoa flakes (find them at Whole Foods)
– 2/3 cups dark chocolate chips
– A dash of cinammon
– 4 tbsp 7 grain mix 
– 2 1/2 tbsp white ground chia seeds
– 2/3 cups unsweetened shredded coconut
– 1/3 cup honey
– 1/2 cup almond butter
