Food File: No-Bake Oatmeal Pumpkin Peanut Butter Protein Bites

With Fall in full swing I decided to give pumpkin a try in a couple of recipes and to kick things off, no-bake oatmeal pumpkin protein bites came to life, with no other than one of my fave combos, peanut butter and chocolate 🙂 I love whipping up a batch of protein bites every week and keep them handy when hunger strikes and you just need a small pick-me-up you know? These take minutes to make and they are the perfect on-the-go or pre/post workout little bite!

WHAT YOU NEED:
. 1 cup oats.
. 1 scoop unflavoured vegan protein powder (I used this one).
. 1 tsp. vanilla essence.
. 1 tsp. cinnamon.
. 1/4 cup peanut butter.
. 1/3 cup pumpkin puree.
. 1/4 cup semi-sweet chocolate chips.

WHAT TO DO:
. In a large bowl, combine oats, protein powder, and cinnamon (you can also add a 1/4 tsp. all-spice if you feel like to).
. Add the peanut butter*, pumpkin puree, and vanilla and combine with a wooden spoon.
. Add chocolate chips.
. Using your hands, form balls and place in a container (makes approx. 18 balls)
. Keep refrigerated in a tight container for a couple of days.

* Whenever I’m baking with nut butters I always like to soften them up in the microwave for 45 seconds or so. Is completely optional, but it does help when mixing all the ingredients.
