Food File: One Step No-Bake Nut Bars

Inspired by the go-go nut bar from Pure Bread, here’s probably one of the easiest recipes I’ve ever whipped up: protein-packed one-step no-bake nut bars! These are so simple to make and so incredibly delicious! If you like seeds and nuts then you’ll love them! I topped these with pumpkin seeds, almonds and semi-sweet chocolate, but feel free to use any toppings of your liking 😉

They are the perfect snack to make when you are pressed on time as you throw everything in a bowl, mix with a wooden spoon, transfer to a baking dish, wait until they are firm and cut into pieces. That simple! Scroll down for the recipe!

What you need:
. 1 cup almond butter.
. 1 tbsp. melted coconut oil.
. 1 scoop vanilla flavoured fermented vegan protein powder.
. 1/2 tbsp. agave.
. 1 tsp. cinnamon.
. 1 tbsp. hemp hearts.
. 1/2 cup unsweetened shredded coconut.
. 1/2 cup raw almonds (plus more for sprinkling).
. 1/2 cup pumpkin seeds (plus more for sprinkling).
. 1/2 semi-sweet chocolate chips (plus more for sprinkling).
. 1/2 cup oats.

What to do:
. Combine all ingredients in a large bowl.
. Pour over a rectangular baking dish previously lined with parchment paper.
. Top with a handful of chocolate chips, almonds and pumpkin seeds.
. Transfer to the freezer for an hour.
. Take out and cut into bars or squares.
. Store in the fridge in a tight container.
