If you have never heard of Pao de Queijo before, let me introduce you to this Brazilian cheesy deliciousness that is incredibly easy to make and tastes like a little piece of (gluten-free) heaven 🙂
If you google it you’ll find a ton of recipes on the web, and in all honesty, I’ve tried a couple of different ones and they all work fine! I have even swapped some ingredients, and it always works. Also, while looking up the recipe, I came across two main methods, an easy one and a super easy one, and after testing them I can tell you that they both work 😉
WHAT YOU NEED:
– 1/4 cup butter – I have used coconut oil and they come out just as nice, just make sure to add a tiny bit less than 1/4 cup or they will be too oily.
– 1 egg
– 2/3 cup milk – I have made them with almond milk and all fine 😉
– 1 1/2 cup tapioca flour
– 1/2 cup cheese – I like to do a mix of parmigiano and either gouda or cheddar, in a 3:1 ratio 😉
WHAT TO DO:
So the easy way is to heat up the milk and butter in a saucepan on med-high heat until it boils.
As soon as it starts boiling remove and stir in tapioca flour.
Stir in egg and cheese until well combined (it will be sticky and look like cottage cheese)
Drop big spoonfuls of the mixture on a baking sheet and bake at 330 for approx. 22 min or until light golden brown.
Enjoy them while they are still warm!
Now, the super easy way to do it, is to mix all ingredients in a blender, but instead of using a baking sheet you’ll need a muffin tin because the batter gets very liquidy. Isn’t that easy? You can even experiment and add a little bit of spinach, replace the cheeses with your favorite ones, add some herbs….get creative 😉
