With bbq season just around the corner (yes vegetarians also love grilling!) I wanted to share this delicious recipe for veggie burgers for all the vegetarians out there like me 😉 It’s super simple, healthy, and it freezes very well (right now I have 8 patties in a ziplock in my freezer).
INGREDIENTS:
. 3/4 cup cooked quinoa
. 1/3 cup cheddar cheese (shredded)
. 1/3 cup parmesan cheese (I like to use parmigiano reggiano)
. 2-3 green onion stalks (chopped)
. 1 garlic clove (minced)
. 3 eggs (lightly beaten with a fork)
. Salt and pepper to taste
. About 1 cup of dried bread crumbs
WHAT TO DO:
. In a large bowl combine quinoa, garlic, green onions, and cheeses.
. Add the eggs and combine well.
. Season with salt and pepper to taste.
. Add bread crumbs and form the patties with your hands. Don’t be scared if you feel like they are going to fall apart, as soon as you place them on the pan and lightly press them down they will hold up their form.
. Heat up a pan on medium and cook for about 6 min on each side or until golden. Top with your favorite veggies and enjoy!
I love making sweet potato “fries” as a side dish. They are super easy to make and I always have them in the fridge as they are great for salads. Just peel the potatoes, cut them in sticks or wedges, place them on a baking tray with some coconut oil, sea salt and rosemary and cook for 20-25 min at 400 degrees, flip them over and bake for another 20-25 min. Not too much science to it but so good! 😉
