Food File: Spitzbuben Recipe

Breaking away from my regular Outfit post on a Monday morning to share this recipe with all of you in case you’ll like to give it a try this week! This comes from my grandmother’s book and it’s my absolute favourite Holiday cookie. I know them as Spitzbuben, but they also go by Jam Sandwiches, Swiss Sandwiches and Linzer cookies. This year I decided to give them a spin and instead of finishing them off with the usual powdered sugar + rum glaze, I made cut-out tops and I sprinkled them with powdered sugar. I’ll be honest, they sure are a bit of work as you have to roll the dough over an over, but trust me, they are 100% worth it 🙂

INGREDIENTS:
. 3 cups flour ( you can start with 2 3/4 cups and add if you need more).
. 1 cup butter (at room temperature).
. 1 1/4 cups powdered sugar plus more for dusting.
. 1 1/2 cups ground hazelnuts (or any other nut you’d like to use).
. 1 egg.
. 1 packet of vanilla sugar.
. Raspberry jam (I also like using apricot jam, but you can use what you like best!).

WHAT TO DO:
. Preheat oven to 350 degrees.
. Prepare baking sheets with parchment paper.
. Combine flour, vanilla sugar, powdered sugar and hazelnuts.
. Place dry ingredients mix on your kitchen counter and shape it into a “volcano”.
. Add butter and egg, and combine ingredients until you form the dough. If it’s a bit dry then add a little bit of butter.
. Wrap dough with plastic paper and let chill in the fridge for 1-2 hours.
. Take the dough out from the fridge, unwrap and roll out portions of the dough with a rolling pin (make sure the surface is floured). Make sure you keep adding dough every time you are rolling the scraps so that it doesn’t become too dry.
. Using  linzer cookie cutters, cut out as many cookies as possible and transfer to baking sheet. If you don’t have linzer cookie cutters you can definitely use regular ones (you just won’t have the cut-out top).
. Bake for 10-12 minutes until slightly golden.
. Let cool, spread jam on one cookie and form sandwiches.
.  Sprinkle with powdered sugar (you can do this to the tops before forming the sandwiches or at the end).
. Cookies will last several weeks in an air-tight container and they do get better with time 😉
