Food File: The Perfect Birthday Cake Recipe

As many of you know, my little boy turned 5 a couple of weeks ago and for his birthday he specifically requested a vanilla on vanilla birthday cake. Of course, birthdays are days to go all out so I didn’t want to mess around with a recipe to try to make it super healthy, instead I turned to my mom, who is a really good baker and cook, for her no-fail vanilla cake recipe. A cake that I describe as soft, moist and delicious, basically, the perfect birthday cake recipe 🙂

I received so many compliments you wouldn’t believe it, seriously, even if you have never made a cake before, this recipe will make you look like a pro 😉

What you need:
. 350 gr (3 1/2 sticks) butter at room temperature
. 500 gr (4 cups) flour
. 500 gr (2 1/2 cups) sugar
. 7 eggs
. 1 1/3 cup milk
. 1 teaspoon baking powder
. 1 tablespoon vanilla

What to do:
. Preheat the oven to 350 and grease two 9 inch round baking pans.
. Beat the butter with a stand mixer until creamy.
. Add sugar and keep beating.
. Add eggs, one at a time until well incorporated into the mixture.
. Add the baking powder to the flour and vanilla to the milk.
. With a wooden spoon or spatula start incorporating the flour and the milk by alternating small amounts of each. Start and finish with the flour.
. Pour onto a baking pan or dish (I used two 9-inch round pans for a layered cake)
. Bake for approx. 35 min or until golden and ready. Note that if you’re using only one baking pan, the time could be anything between 45 min and 1 hour.

For the Icing: I used this Classic Vanilla Buttercream Frosting Recipe (with skim milk) and it turned out really good, plus the recipe was enough for the whole cake 🙂

Spread a coat of icing over first cake
Then onto the second one, making sure you cover the whole cake
