Food File: Wholewheat blueberry squares

I made these bars two weeks ago when we had that picnic on the island and it was such a big success! The recipe is the easiest (just as I like it), and as usual, I rebelled and swapped the flour for a healthier version. This time I used wholewheat flour but next time I’m going to use quinoa flour (kind of obsessed with it!).

If you like blueberries, I highly recommend this recipe, the outcome is some sort of a bread/muffin/cake hybrid that is delicious! I also recommend you check out the original recipe, the photos are gorgeous 😉

What you need:
– 2 cups wholewheat flour
– 1 1/2 tsp baking powder
– 1/2 tsp salt
– 1 stick butter, at room temperature
– 1 cup sugar
– 2 eggs
– 2 cups blueberries
– some lemon zest
– 1/2 cup fat-free plain yogurt

What to do:
Mix your dry ingredients. Cream the butter and sugar, then add the eggs one at a time. Add the yogurt, and then your dry ingredients mix. Lastly, fold in the blueberries. Transfer to a previously greased pan and bake for about 40min or until golden brown. You could either bake it in a loaf pan, or as I did, in a square pan and then cut into small bars. Enjoy! 😉
