Hey everyone! You guys know I love making protein balls and having them around as a favourite quick pre/post/sweet cravings bite, and this time around, instead of coming up with just another version of chocolate chip balls, I branched out and came up with this refreshing coconut-lemon-cashew based recipe that is perfect for Summer and for those days when you feel like eating something citrus-y. I love how these bites turned out and I’m sure you’ll love them too. The best part is that they basically take three easy steps to make: combining all ingredients, shaping the mixture into balls, and dipping in coconut. See? Should not take you more than 15 minutes to whip up!

Here’s what you need:
. 1 cup unsalted cashews.
. 1 cup unsweetened coconut.
. Zest of 1 lemon.
. Juice of 1 lemon.
. 1/2 teaspoon vanilla.
. 1 scoop vanilla flavoured plant-based protein powder (you guys already know I love this one)
. 2 tbsp. Maple syrup.
. 1 tbsp. honey.
What to do:
This recipe is so simple that basically all you have to do is throw it all in a food processor (if you have a small one just do it in two batches) and press until combined.
Transfer to a bowl and using your hands shape into balls.
Dip each ball in dried coconut and refrigerate.
This recipe yields 12 balls which will easily last a week if stored in the fridge in a tight container!
