I’m back with another healthy snack recipe that you’ll love. This time I decided to experiment with cashews (for some reason I’ve been loving them lately!), and I couldn’t be happier with how these quick and easy coconut-cashew protein bites turned out. I also made some cashew-based bars that I need to photograph so that I can share with all of you (stay tuned for the recipe!). Like I’ve said before, protein bites or energy balls (however you want to call them), are one of the easiest snacks to make and have around for a quick pick-me-up. Whether you have them before your workout, after, or just as an afternoon bite, there’s nothing as customizable (proof here, here, here and here) and practical. What you need:
. 1 cup roasted unsalted cashews.
. 1/2 cup unsweetened coconut.
. 1 scoop protein powder (my go-to brand is Genuine Health).
. 1 tbsp. hemp hearts.
. 1/2 cup unsweetened almond milk.
. 1/3 cup semi-sweet chocolate chips (you can definitely substitute with dairy-free ones).
What to do:
. Blend cashews in a food processor.
. Transfer cashews to a bowl and add coconut, protein powder and hemp. Mix well with a wooden spoon.
. Add almond milk and mix until everything is well combined.
. Add chocolate chips and use your hands to shape the mixture into balls.
. Roll balls in some extra coconut, store in a container and place in the fridge to set.
