Food File: Breakfast Açai Bowl

Today I bring you a suuuuper easy recipe I adapted from It’s All Easy that is not only delicious but totally customizable. Have you ever had an Açai Bowl before? I had tried it at one of my favorite smoothie spots here in the city and I always leave dreaming about my next one for days (ok maybe weeks!) So of course I had to try this on my own, and wow, it’s soooo simple yet packed with so much flavour (not to mention the health benefits!) You can whip this up in minutes and it would be a great recipe to try for Mother’s Day if you want to surprise her with breakfast in bed, just saying 😉
The recipe comes from page 2 for those of you with the book, but here’s what I used instead:
For the smoothie:
. 1 scoop protein powder (I like the plant based kind, vanilla flavoured)
. 1 pack frozen Açai berries (you can find it at Whole Foods in the freezer isle)
. 5 large strawberries (if you want it to have a thicker consistency add a banana)
. 1 cup almond milk (unsweetened)
. 1 tablespoon chia seeds
Toppings:
. 1/4 banana 
. 1 tablespoon toasted coconut flakes
. 1-2 strawberries
. 1 tablespoon toasted coconut flakes
. 1 tablespoon qi’a cereal
. 3 tablespoon granola
. 1 tablespoon dried coconut (unsweetened)
Blend all smoothie ingredients in a high-powered blender until smooth, pour the mixture into a bowl (yields 2), and garnish with the toppings or any you like. Easy peasy 🙂
