Today’s recipe is a healthy, vegan, and gluten-free chocolate mousse from It’s All Easy (with a slight variation) that you’re going to love. Seriously, this super smooth and creamy chocolate mousse is incredibly fast and easy to whip up. Prep time will probably be 10 min? Then all you have to do is wait until it gets firm in the fridge (an hour at the very least). This is one of those recipes that gets you out of trouble at the very last minute and still manages to surprise your guests. Keep it handy because I promise you’ll love it.
Before we get into the ingredients, yes, it’s avocado based, and no, it does not taste like avocado. Trust me. I love avocado toast and avocados in general, but I’m not one to add avocado to smoothies and green juices so trust me when I say that this doesn’t taste like it, in fact, you really can’t tell it’s made with avocado.
INGREDIENTS:
. 1 large avocado, peeled and pitted
. 2 tablespoons almond butter
. 2 tablespoons coconut oil
. 1/4 cup maple syrup
. 1/4 cup almond milk (I like to use the unsweetened kind)
. 1/4 cup cocoa powder
. 1 tsp. vanilla
. 3 small dates (pitted)
. 1/4 raw coconut sugar
CREAM:
. I can coconut milk (chilled in the fridge over night)
. 1 tablespoon powdered sugar
In a blender or food processor (I used my Vitamix), combine all ingredients and blend until smooth (shouldn’t take you more than 1-2 minutes) Divide the mixture among 3 small ramekins, cover and refrigerate for at least an hour. When ready to serve, top it off with a large spoonful of coconut cream which you make by taking the solid part of a previously refrigerated can of coconut milk and beating it with a tablespoon of powdered sugar. Finish it off with some toasted coconut flakes and sea salt and voilá!
